    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are fully coated and resemble wet sand.

    Form the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup or your fingers to ensure it’s packed tightly. Bake in the preheated oven for 10 minutes. Remove and let cool.

Filling

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Gradually add in the granulated sugar and continue to beat until well combined.

    Add sour cream and vanilla

    Add the sour cream and vanilla extract to the cream cheese mixture. Beat until fully incorporated, scraping down the sides of the bowl as needed.

    Add eggs

    Add the eggs one at a time, beating just until combined after each addition. Make sure not to overmix, as this can lead to cracks in the cheesecake.

    Pour into crust

    Pour the filling mixture over the cooled crust in the springform pan. Smooth the top with a spatula.

    Bake the cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

    After the cheesecake has cooled in the oven, cover it with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
