Pudding Base

Method

Pudding Base

  1. 1

    Make the Butterscotch Base

In a medium saucepan, combine the granulated sugar and butter over medium heat. Stir until the sugar is melted and the mixture is bubbling gently.

  2. 2

    Add Cream and Milk

Slowly whisk in the heavy cream and whole milk until fully combined.

  3. 3

    Incorporate Brown Sugar and Salt

Add the brown sugar and salt, stirring until the brown sugar dissolves completely.

  4. 4

    Thicken the Mixture

In a small bowl, whisk together cornstarch and egg yolks. Gradually add a small amount of the warm butterscotch mixture to the cornstarch and yolks, whisking constantly to temper the eggs.

  5. 5

    Combine and Cook

Pour the egg yolk mixture back into the saucepan, stirring continuously over medium heat until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

  6. 6

    Finish with Vanilla

Remove from heat and stir in the vanilla extract. Allow to cool slightly before dividing into serving cups.

Whipped Cream

  1. 7

    Prepare the Whipped Cream

In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.

  2. 8

    Whip the Cream

Using an electric mixer, beat the mixture on medium-high speed until soft peaks form, about 3-5 minutes.

  3. 9

    Serve

Top the cooled butterscotch budino with a generous dollop of whipped cream before serving.
