Method

Prepare the Salad Base

  1. 1

    Chop the Vegetables

Wash and chop the Romaine lettuce into bite-sized pieces. Halve the cherry tomatoes, peel and dice the cucumber, and finely slice the red onion. Cut the avocado into cubes.

  2. 2

    Combine Ingredients

In a large salad bowl, combine the chopped Romaine lettuce, cherry tomatoes, cucumber, red onion, avocado, corn, and black beans. Toss gently to mix.

Make the Tortilla Strips

  1. 3

    Prepare Tortillas

Preheat the oven to 400°F (200°C). Cut the corn tortillas into strips or triangles.

  2. 4

    Bake the Tortilla Strips

In a bowl, toss the tortilla strips with olive oil and a pinch of salt. Spread them out on a baking sheet in a single layer and bake for 8-10 minutes or until crispy and golden, flipping halfway through.

Make the Dressing

  1. 5

    Combine Dressing Ingredients

In a mixing bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and pepper until well combined.

Assemble the Salad

  1. 6

    Combine Salad and Dressing

Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.

  2. 7

    Add Tortilla Strips

Top the salad with the baked tortilla strips just before serving for added crunch.
