Method

Preparation

  1. 1

    Cook the Chorizo

In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.

  2. 2

    Prepare the Cheese Mixture

While the chorizo is cooking, grate the Monterey Jack and Queso Blanco cheese. Set aside.

  3. 3

    Mince Garlic and Jalapeño

Mince the garlic cloves and finely chop the jalapeño pepper (remove seeds for less heat if desired).

  4. 4

    Combine Ingredients

In a mixing bowl, combine cooked chorizo, grated cheeses, minced garlic, chopped jalapeño, and chopped cilantro. Mix well.

Baking

  1. 5

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 6

    Transfer to Cast-Iron Skillet

Transfer the cheese mixture into a cast-iron skillet, spreading it evenly.

  3. 7

    Bake the Queso Fundido

Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serving

  1. 8

    Prepare Tortillas

While the queso is baking, heat the flour tortillas in a dry skillet over medium heat for about 1-2 minutes on each side until warm and pliable.

  2. 9

    Serve

Once the queso fundido is ready, remove it from the oven, drizzle with olive oil if desired, and serve immediately with warm tortillas.
