Quesadilla

Prepare the Ingredients
Gather all the ingredients for the quesadillas including tortillas, shredded cheese, olive oil, and salt.

Assemble the Quesadilla
Heat a non-stick skillet over medium heat. Brush one side of a tortilla with olive oil and place it in the skillet, oil side down. Sprinkle 1/2 cup of shredded cheese evenly over the tortilla.

Cook the Quesadilla
Place another tortilla on top, oil side up. Cook for about 2-3 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and the cheese is melted.

Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and sprinkle with a pinch of salt before serving.

Prepare the Avocados
Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Mash the Avocados
Using a fork or a potato masher, mash the avocados until you reach your desired texture (chunky or smooth).

Taste the guacamole and adjust the seasoning if necessary, adding more salt or lime juice to taste.

Transfer the guacamole to a serving bowl and serve immediately alongside the quesadilla.
