Dumpling Preparation

Prepare the Filling
In a mixing bowl, combine the ground pork, chopped shrimp, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Assemble the Dumplings
Take a wonton wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a triangle, and press the edges to seal. Ensure there are no air pockets. Repeat with the remaining wrappers and filling.

Cooking the Dumplings
You can either steam, boil, or pan-fry the dumplings. For steaming, place them in a steamer basket over boiling water for about 8-10 minutes. For boiling, cook in salted water for about 4-5 minutes. For pan-frying, heat a tablespoon of oil in a skillet, add the dumplings, and fry until golden brown on one side, then add a splash of water, cover, and steam for about 5 minutes.

Prepare the Fries
Preheat your oven to 425°F (220°C). Spread the cut russet potatoes on a baking sheet, drizzle with oil, and season with salt. Bake for about 25-30 minutes or until golden and crispy, flipping halfway through.

Assemble the Fries
Once the fries are cooked, remove them from the oven and layer the cooked carne asada on top. Sprinkle shredded cheese generously over the carne asada.

Melt the Cheese
Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve
Remove the fries from the oven and top with sour cream, guacamole, sliced jalapeños, and a sprinkle of chopped cilantro. Serve immediately alongside the dumplings.
