    Prepare the Cheese

    Cut the queso blanco or Oaxaca cheese into small cubes or slices, about 1-inch thick.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C).

    Fry the Cheese

    Carefully place the cheese pieces in the hot oil and fry until golden and crispy on all sides, about 2-3 minutes. Remove and drain on paper towels.

    Prepare the Chorizo Mixture

    In a mixing bowl, combine ground pork with paprika, cumin, garlic powder, chili powder, salt, black pepper, and apple cider vinegar. Mix thoroughly until well combined.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo mixture, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes. Drain excess grease if necessary.

    On a serving plate, layer the fried cheese topped with the cooked chorizo.
