Prep the Tortillas
Cut the corn tortillas into triangles to form chips.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate. Sprinkle with salt while still warm.

Melt the Cheeses
In a medium saucepan over low heat, combine the white American cheese and Monterey Jack cheese, stirring continuously until melted.

Simmer
Continue to cook the mixture over low heat for about 5-10 minutes, stirring occasionally until the queso is smooth and creamy.

Serve
Transfer the queso blanco to a serving bowl and serve warm alongside the tortilla chips.
