Chicken Tinga

Toppings

Method

Chicken Tinga Preparation

  1. 1

    Cook the Chicken

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.

  2. 2

    Add Garlic and Spices

Stir in the minced garlic and cook for an additional minute. Add the chipotle peppers, diced tomatoes, chicken broth, cumin, salt, and black pepper.

  3. 3

    Simmer the Mixture

Add the chicken thighs to the skillet, ensuring they are submerged in the sauce. Bring to a simmer, cover, and cook for 30 minutes until the chicken is cooked through.

  4. 4

    Shred the Chicken

Remove the chicken from the skillet and let it cool slightly. Shred the chicken using two forks and return it to the skillet, mixing well with the sauce. Cook for an additional 5 minutes to combine the flavors.

Serving

  1. 5

    Assemble the Dish

To serve, place a generous portion of Chicken Tinga on a plate or in a bowl. Top with shredded lettuce, crumbled Cotija cheese, and a drizzle of crema.

  2. 6

    Garnish

Feel free to add extra toppings like sliced avocados or fresh cilantro if desired.
