Dough Preparation
Activate the Yeast
In a small bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until foamy.
Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Pour in the activated yeast mixture and melted unsalted butter. Mix until a dough forms.
Shaping and Baking
Preheat the Oven
Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
Shape the Pretzel Bites
Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 8 equal pieces, then roll each piece into a rope about 1 inch thick. Cut each rope into 1-inch pieces to form bite-sized pretzel pieces.
Prepare the Baking Solution
In a large pot, bring 10 cups of water to a boil. Add 2 tablespoons of baking soda to the boiling water.
Boil the Pretzel Bites
Carefully drop the pretzel bites into the boiling baking soda solution, cooking for about 30 seconds on each side. Use a slotted spoon to remove them and place them on the lined baking sheet.
Bake the Pretzel Bites
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

Serve with Mustard
