Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare Butternut Squash
Peel and cube the butternut squash into bite-sized pieces. Toss them in a bowl with 1 tablespoon of olive oil, salt, and black pepper.

Roast Butternut Squash
Spread the seasoned butternut squash on a baking sheet in a single layer. Roast in the oven for 25-30 minutes or until tender and slightly caramelized.

Prepare Goat Cheese
While the kale is cooking, slice the goat cheese into rounds. Place on a baking sheet and bake in the oven for about 5 minutes until warmed and slightly melty.

Combine Ingredients
In a large bowl, combine the sautéed kale, roasted butternut squash, and crumbled bacon. Toss gently to combine.

Plate the salad and top with warm goat cheese rounds. Drizzle with aged balsamic vinegar before serving.
