Method
Filling
- 1
Prepare the Fruit Filling
In a large mixing bowl, combine the fresh mixed berries, granulated sugar, all-purpose flour, lemon juice, cinnamon, and vanilla extract. Gently toss until the berries are well coated. Allow the mixture to sit for about 10 minutes to let the juices develop.
Cobbler Topping
- 2
Make the Cobbler Topping
In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Pour in the milk and melted butter, stirring until just combined. The batter will be thick.
- 3
Combine Topping and Filling
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. Pour the fruit filling into the bottom of the dish, spreading it evenly. Spoon the cobbler topping over the fruit filling, spreading it out to cover as much as possible.
Bake
- 4
Bake the Cobbler
Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted in the center comes out clean.
Chantilly Cream
- 5
Prepare the Chantilly Cream
While the cobbler is baking, prepare the Chantilly cream. In a mixing bowl, whip the heavy cream with an electric mixer on medium speed until it begins to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until soft peaks form.
Serve
- 6
Serve the Cobbler
Once the cobbler is done baking, remove it from the oven and let it cool slightly. Serve warm with a generous dollop of Chantilly cream on top.
