Marinade Preparation

Prepare the Marinade
In a large bowl, combine paprika, soy sauce, honey, minced garlic, minced ginger, black pepper, and sesame oil. Whisk together until fully mixed.

Marinate the Pork
Add the pork chops to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight for optimal flavor.

Prepare for Smoking
In a deep skillet or wok, combine tea leaves, rice, and brown sugar. Mix well and spread the mixture evenly on the bottom of the skillet.

Smoke the Pork
Place a rack over the tea mixture and arrange the marinated pork chops on the rack. Cover the skillet tightly with a lid and heat over medium heat for about 15-20 minutes, allowing the pork to absorb the smoke.

Grill the Pork Chops
Once smoked, preheat a grill or grill pan over medium-high heat. Grill the pork chops for 4-5 minutes on each side until they reach an internal temperature of 145°F (63°C).

In a large pot, add baby potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes or until fork-tender.

Stir in chopped chives for added flavor and garnish. Serve warm alongside the smoked pork.
