Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring salted water to a boil.

  2. 2

    Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining, reserve about 1 cup of pasta cooking water.

  4. 4

    Drain the Pasta

Drain the spaghetti and set aside.

Making the Sauce

  1. 5

    Cook the Bacon

In a large skillet over medium heat, cook the bacon or pancetta until crispy, about 5-7 minutes. Remove from heat.

  2. 6

    Mix the Eggs and Cream

In a bowl, whisk together the eggs, heavy cream, Parmesan cheese, and black pepper until well combined.

Combining Everything

  1. 7

    Combine Pasta and Bacon

Add the drained spaghetti to the skillet with the bacon and toss to combine.

  2. 8

    Add the Egg Mixture

Quickly pour the egg and cream mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  3. 9

    Season to Taste

Taste and adjust seasoning with salt and more black pepper if needed.

Serving

  1. 10

    Plate the Dish

Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley.
