    Prepare the Ingredients

    Start by cutting the beef chuck roast into large cubes, approximately 1.5 inches. Chop the onion, mince the garlic, slice the carrots, and cube the potatoes.

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef cubes in batches, searing on all sides until browned. This should take about 5-7 minutes per batch. Remove the beef and set aside.

    In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent. Stir in the sliced carrots and cook for an additional 2 minutes.

    Return the seared beef to the pot. Add the cubed potatoes, beef broth, bay leaves, dried thyme, salt, and black pepper. Stir to combine all the ingredients.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2-2.5 hours, or until the beef is tender and the flavors are well combined. Stir occasionally.
