Preparing the Cod

Season the Cod
Pat the cod fillets dry with a paper towel. Season both sides with salt and black pepper.

Sauté the Cod
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the cod fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Making the Gremolata

Combine Ingredients
In a small bowl, mix together the chopped parsley, minced garlic, lemon zest, and chopped capers. Set aside.
Preparing Edamame

Cook Edamame
In a small saucepan, bring water to a boil. Add shelled edamame and cook for 3-5 minutes until tender. Drain and set aside.
Final Assembly

Combine and Serve
In the same skillet used for the cod, add the remaining tablespoon of olive oil and the cooked edamame. Stir in the lemon juice and cook for an additional 1-2 minutes. Plate the sautéed cod, spoon the edamame mixture over the top, and sprinkle with the gremolata before serving.
