Dumpling Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

    Add Wet Ingredients

    Make a well in the center of the dry ingredients and add the milk and melted butter. Stir until just combined. Do not overmix; the dough should be slightly sticky.

    Rest the Dough

    Cover the bowl with a clean kitchen towel and let the dough rest for 10 minutes while you prepare the chicken and vegetables.

Chicken and Vegetable Preparation

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Sauté Chicken

    In a large oven-safe pot, heat the olive oil over medium-high heat. Season chicken thighs with salt and pepper and add to the pot. Sauté for about 5-7 minutes on each side until browned. Remove chicken and set aside.

    Cook Vegetables

    In the same pot, add the diced onion, chopped celery, sliced carrots, and minced garlic. Sauté for about 4-5 minutes until the vegetables are softened.

    Add Broth and Chicken

    Pour in the chicken broth and bring to a simmer. Return the chicken thighs to the pot and sprinkle with fresh thyme. Allow to simmer for another 10 minutes.

    Add Dumplings

    Using a spoon, drop spoonfuls of the dumpling dough over the simmering chicken and vegetables. Make sure to leave space between each dumpling.

    Bake

    Transfer the pot to the preheated oven and bake for 20-25 minutes, or until the dumplings are puffed and golden brown.

    Serve

    Remove from the oven and let cool for a few minutes. Serve hot, garnished with additional thyme if desired.
