Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until all the crumbs are well coated.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar while continuing to mix until well combined.

Add remaining ingredients
Add the vanilla extract, sour cream, and flour to the cream cheese mixture. Mix until combined. Add the eggs one at a time, mixing on low speed just until incorporated after each addition.

Pour filling into crust
Carefully pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
Baking the Cheesecake

Bake the cheesecake
Bake in the oven at 325°F (160°C) for about 50-60 minutes. The edges should be set, but the center will still have a slight jiggle.

Cool the cheesecake
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracking. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
