Calamari Preparation

Clean the Squid
Rinse the squid under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

Prepare the Breading
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk.

Bread the Squid
Dip each squid ring first into the egg mixture, then coat with the flour mixture, ensuring an even layer.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Squid
Carefully add the breaded squid rings to the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Make the Sauce
Add crushed tomatoes, oregano, salt, black pepper, and red pepper flakes to the saucepan. Stir well and let it simmer for 15-20 minutes.

Stir in the chopped fresh basil just before serving and remove from heat.
