In a small saucepan, combine equal parts sugar and water (e.g., 1 cup of sugar and 1 cup of water). Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let cool. Store any leftovers in the fridge.

Juice the Lemons
Juice fresh lemons until you have 1 oz of lemon juice. Strain to remove any seeds or pulp for a smoother cocktail.

Slice the Apples
Wash and slice the apples into thin slices for garnishing the drink. You can choose to leave the skin on for added color and texture.
Mixing the Cocktail

Combine Ingredients
In a cocktail shaker filled with ice, add 2 oz of MRDC River Rose Gin, 1 oz of Aperol, 0.5 oz of Dry Curaçao, 0.5 oz of house simple syrup, and 1 oz of lemon juice.

Secure the lid on the cocktail shaker and shake vigorously for about 15-20 seconds until well chilled.

Strain the mixture into a chilled glass filled with ice (or a coupe glass if you prefer).

Gently top the drink with 3 oz of Prosecco. Stir gently to combine the flavors.
