Prep potatoes

Wash and peel the russet potatoes (peeling optional). Cut into even 1/3–1/2 inch sticks. Place cut fries into a large bowl of cold water and soak for 30 minutes to remove excess starch. Drain and pat very dry with clean kitchen towels or paper towels.

First fry (blanch)

Pour vegetable oil into a deep, heavy-bottomed pot or deep fryer and heat to 325°F (160°C). Working in batches, fry the dried potato sticks for 3–4 minutes until they are pale, limp, and just beginning to soften but not browned. Use a slotted spoon to transfer fries to a paper towel–lined tray. Let cool for at least 10 minutes; can be held at room temperature while you finish batches.

Second fry (crisp)

Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden and crisp. Remove with a slotted spoon, drain on paper towels, and immediately season with salt and black pepper while hot. Keep fries warm in a 200°F (95°C) oven on a baking sheet if assembling all at once.

Cook bacon

While fries are resting between blanches or while oven is warming, cook the bacon. For even crispness, lay bacon slices on a rimmed baking sheet and bake at 400°F (200°C) for 12–18 minutes, turning once if desired, until crisp. Alternatively, pan-fry over medium heat until crisp. Transfer cooked bacon to paper towels to drain, then chop or crumble into bite-sized pieces.

Prepare garnish

Thinly slice green onions if using and set aside. Measure out blue cheese crumbles in a bowl.

Sauces / Assembly

Warm buffalo sauce (optional)

Warm the medium buffalo sauce gently in a small saucepan over low heat or in the microwave for 20–30 seconds just until pourable. Stir to ensure even texture. Do not boil.

Assemble Buffalo Fries

Place a double portion of hot fries on a serving platter or divided plates. Evenly sprinkle the chopped bacon over the fries, then scatter blue cheese crumbles on top. Drizzle warmed medium buffalo sauce over the fries to your preferred level (start with about 1/2 cup, reserve remaining to serve on the side). Finally, drizzle ranch dressing over the top (or serve ranch on the side) and finish with sliced green onions if using.

Serve

Serve immediately while fries are hot and crisp. Provide extra buffalo sauce and ranch on the side for dipping.
