Prepare marinade
In a shallow bowl or resealable bag, combine 2 tbs olive oil, 1 tbs apple cider vinegar, 1 tbs soy sauce, 1 tbs honey, minced garlic (2 cloves), 1 tsp smoked paprika, 1 tsp kosher salt and 1 tsp black pepper. Whisk or shake until emulsified.
Marinate chicken
Pound the 2 chicken breasts to an even thickness (about 3/4" thick) or slice in half horizontally for thinner cutlets. Place chicken into the marinade, ensuring it's fully coated. Refrigerate and marinate for at least 30 minutes and up to 4 hours.
Grill chicken
Remove chicken from marinade and let excess drip off. Grill chicken 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Transfer to a plate and let rest 5 minutes before slicing.
Apple Ale Honey Mustard
Make the sauce
In a small bowl, whisk together 3 tsp whole grain mustard, 1 tsp Dijon, 2 tbs honey, 2 tbs mild apple ale (or apple juice), 1 tsp apple cider vinegar, a pinch of salt and a pinch of black pepper. Taste and adjust balance—add 1 tsp extra honey if you want sweeter, or more vinegar for tang.

Assemble sandwich
Spread a generous tablespoon of the apple ale honey mustard across the bottom half of each roll. Place a romaine leaf on top of the mustard, add 2 tomato slices, then top with sliced grilled chicken (divide chicken between sandwiches). Lay one slice of white cheddar on each chicken portion while still warm so it softens slightly. Add the top roll, press gently.
