Prepare marinade

In a shallow bowl or resealable bag, combine 2 tbs olive oil, 1 tbs apple cider vinegar, 1 tbs soy sauce, 1 tbs honey, minced garlic (2 cloves), 1 tsp smoked paprika, 1 tsp kosher salt and 1 tsp black pepper. Whisk or shake until emulsified.

Marinate chicken

Pound the 2 chicken breasts to an even thickness (about 3/4" thick) or slice in half horizontally for thinner cutlets. Place chicken into the marinade, ensuring it's fully coated. Refrigerate and marinate for at least 30 minutes and up to 4 hours.

Preheat grill

About 10 minutes before cooking, preheat an outdoor grill or grill pan to medium-high heat (about 400°F / 200°C). Oil the grill grates or brush the pan with a little oil to prevent sticking.

Grill chicken

Remove chicken from marinade and let excess drip off. Grill chicken 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Transfer to a plate and let rest 5 minutes before slicing.

Make the sauce

In a small bowl, whisk together 3 tsp whole grain mustard, 1 tsp Dijon, 2 tbs honey, 2 tbs mild apple ale (or apple juice), 1 tsp apple cider vinegar, a pinch of salt and a pinch of black pepper. Taste and adjust balance—add 1 tsp extra honey if you want sweeter, or more vinegar for tang.

Prepare bread and vegetables

Slice the roll or ciabatta in half. Spread 1/2 tbs butter on each cut side of the bread. Lightly toast on the grill or in a skillet until golden, about 1–2 minutes per side. Meanwhile, slice the tomato into 4 thin slices and wash/pat dry the romaine leaves.

Assemble sandwich

Spread a generous tablespoon of the apple ale honey mustard across the bottom half of each roll. Place a romaine leaf on top of the mustard, add 2 tomato slices, then top with sliced grilled chicken (divide chicken between sandwiches). Lay one slice of white cheddar on each chicken portion while still warm so it softens slightly. Add the top roll, press gently.

Finish and serve

If desired, squeeze a little lemon over the chicken before adding cheese for brightness. Cut sandwiches in half and serve immediately, passing extra apple ale honey mustard on the side.
