Time30m
Serves4

Since opening its doors in 1990, The Cup Café has found a home in the hearts of local Tucsonans and travelers alike. Named as a 'Best Neighborhood Gem' by OpenTable as well as being a perennial winner of 'Best of Tucson' awards, The Cup Café continues to make fans of all who visit. It serves a unique twist of continental favorites, but always with an extra touch of panache. Unique combinations of often local ingredients give every dish a signature taste. And then there’s the dessert carousel, a talk-of-the-town dessert display of house-made sweets.

Instructions

  1. 1

    Prepare the Batter

In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the milk, eggs, and vanilla extract. Melt the butter and let it cool slightly before adding it to the wet mixture.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

  5. 5

    Serve

Serve hot with your choice of toppings such as maple syrup, fresh fruit, or whipped cream.
