Since opening its doors in 1990, The Cup Café has found a home in the hearts of local Tucsonans and travelers alike. It serves a unique twist of continental favorites, but always with an extra touch of panache. Unique combinations of often local ingredients give every dish a signature taste. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Prepare the Batter

In another bowl, whisk together the milk, eggs, and vanilla extract. Melt the butter and let it cool slightly before adding it to the wet mixture.

Mix Wet Ingredients

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

Combine Mixtures

Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Cook the Pancakes

Serve hot with your choice of toppings such as maple syrup, fresh fruit, or whipped cream.
