Cake Preparation

Melt Chocolate and Butter

Preheat the oven to 200°C (400°F). Grease four ramekins with butter and dust with flour. In a heatproof bowl, combine dark chocolate and butter. Melt them together over a double boiler or in the microwave, stirring until smooth.

Mix Ingredients

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined. Stir in the melted chocolate mixture and vanilla extract. Gently fold in the flour until just combined.

Bake the Cakes

Divide the batter evenly among the prepared ramekins. Place them on a baking tray and bake for 10-12 minutes, or until the edges are firm but the center is still soft.

Prepare the Coulis

In a small saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Cook for about 5-7 minutes until the raspberries break down. Strain the mixture through a fine sieve to remove seeds, and let it cool.

Plate the Dessert

Run a knife around the edge of each ramekin to loosen the cakes, then invert onto serving plates. Drizzle with raspberry coulis, and garnish with fresh berries and mint leaves.
