    Prepare the Potatoes

    Wash the fingerling potatoes under cold water and scrub them gently to remove any dirt. Pat them dry with a towel.

    Prepare the Garlic

    Peel the garlic cloves and crush them lightly with the flat side of a knife.

Cooking

    Combine Ingredients

    In a medium saucepan, combine the fingerling potatoes, crushed garlic, thyme, rosemary, salt, and black pepper. Pour the olive oil over the mixture until the potatoes are fully submerged.

    Cook the Potatoes

    Place the saucepan over low heat and cook gently for about 45 minutes, or until the potatoes are tender. Make sure to stir occasionally to prevent sticking.

    Cool and Serve

    Once the potatoes are cooked, remove the saucepan from heat and let the herb confit cool slightly. Serve warm or at room temperature, drizzling some of the infused oil over the potatoes.
