    Prepare the Ingredients

    Thinly slice the grilled steak or chicken, onion, bell peppers, and mushrooms. Set aside.

Cooking

    Sauté the Vegetables

    Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Add the sliced onions and bell peppers. Sauté for about 3-4 minutes until they start to soften.

    Add Mushrooms

    Add the sliced mushrooms to the pan and continue to sauté for another 2-3 minutes until all vegetables are tender. Season with salt and black pepper. Remove the sautéed mixture from the pan and set aside.

    Cook the Eggs

    In a bowl, whisk the eggs until well combined. In the same pan, add the remaining tablespoon of olive oil and heat over medium-low heat. Pour in the beaten eggs and let them cook undisturbed for about 2-3 minutes until the edges start to set.

    Add Filling

    As the eggs are cooking, add the sautéed vegetables and the sliced grilled steak or chicken on one half of the omelette. Sprinkle the Monterey Jack cheese on top.

    Fold the Omelette

    Once the eggs are mostly set, carefully fold the other half of the omelette over the filling. Cook for an additional 1-2 minutes until the cheese is melted and the omelette is fully set.

    Serve
