Method

Cooking the Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain rice under cold water until the water runs clear. This removes excess starch and prevents the rice from being gummy.

    Cook the Rice

    In a medium-sized saucepan, combine the rinsed rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

Sautéing the Vegetables

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook the Onion

    Add the chopped onion to the skillet and sauté for about 2-3 minutes until translucent.

    Add Remaining Vegetables

    Stir in the diced bell pepper, diced carrot, and frozen peas. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.

    Add 2 teaspoons of minced garlic, 1 teaspoon of black pepper, 1 teaspoon of paprika, 1 teaspoon of dried thyme, and 1 teaspoon of dried oregano to the skillet. Stir well and cook for another 1-2 minutes until fragrant.

Combining and Garnishing

    Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix everything together gently until combined.

    Stir in 2 tablespoons of chopped fresh parsley and 1 teaspoon of lemon zest for added freshness and flavor.
