Omelette Preparation

  1. 1

    Whisk the Eggs

In a bowl, crack the three eggs and whisk them together with salt and black pepper until fully combined and slightly frothy.

  2. 2

    Cook the Filling

In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2 minutes until translucent. Then add the sliced mushrooms and cook for another 2-3 minutes until softened.

  3. 3

    Add Seafood

Add the shrimp (and crawfish if using) to the skillet with the onions and mushrooms. Cook until the shrimp turns pink and opaque, about 3-4 minutes. Remove from heat and set aside.

  4. 4

    Cook the Omelette

In the same skillet, add butter and heat over medium-low. Pour in the whisked eggs, tilting the pan to distribute evenly. Cook for about 2-3 minutes until the edges begin to set.

  5. 5

    Add the Filling

Once the edges of the omelette are set, spoon the seafood filling onto one half of the omelette. Sprinkle with shredded Monterey Jack cheese.

  6. 6

    Fold and Serve

Gently fold the omelette in half over the filling. Cook for another minute until the cheese melts. Slide the omelette onto a plate and serve hot.
