Seafood Au Gratin Sauce

    Prepare the Seafood

    In a skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and crawfish, cooking until shrimp turn pink and opaque, about 3-4 minutes. Remove from heat and set aside.

    Make the Roux

    In the same skillet, melt the remaining 2 tablespoons of butter. Whisk in the flour and cook for 1-2 minutes until lightly golden.

    Add Milk and Cream

    Gradually whisk in the milk and heavy cream, stirring constantly until the sauce thickens, about 3-5 minutes.

    Incorporate Cheese and Seasoning

    Remove from heat and stir in the cheddar cheese, half of the parmesan cheese, garlic, salt, pepper, and paprika until melted and well combined. Fold in the cooked seafood mixture.

Benedict Assembly

    Cook Canadian Bacon

    In a skillet, cook the Canadian bacon over medium heat until it is browned and heated through, about 2-3 minutes per side. Remove and keep warm.

    Toast the English Muffins

    Toast the English muffins until golden brown and crispy.

    Poach the Eggs

    In a pot of simmering water, poach the eggs one at a time for about 3-4 minutes until the whites are set but the yolks are still runny. Remove and drain on paper towels.

    Assemble the Dish

    On each toasted English muffin half, place a slice of Canadian bacon. Top with a poached egg and generously spoon the seafood au gratin sauce over the top. Sprinkle with remaining parmesan cheese and chopped parsley.
