Red Beans and Rice

    Prepare the Beans

    Rinse and soak the red beans overnight in water. Drain and set aside.

    Cook the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5 minutes.

    Add Garlic and Spices

    Add the minced garlic, bay leaf, salt, black pepper, cayenne pepper, and thyme. Cook for an additional 2 minutes, stirring frequently.

    Combine Ingredients

    Add the soaked red beans and vegetable broth to the pot. Bring to a boil, then reduce heat to low and let simmer for about 1.5 hours, or until the beans are tender.

    Cook the Rice

    In a separate pot, cook the white rice according to package instructions. Usually, it involves boiling 2 cups of water for 1 cup of rice. Once cooked, fluff with a fork.

    Serve

    Once the beans are tender, remove the bay leaf. Serve the red beans over a bed of white rice and garnish with chopped green onions.

Fried Chicken Breast

    Marinate the Chicken

    In a bowl, soak the chicken breasts in buttermilk for at least 1 hour, preferably overnight in the refrigerator.

    Prepare the Breading

    In a separate bowl, combine flour, paprika, salt, and black pepper.

    Coat the Chicken

    Remove the chicken from the buttermilk, allowing excess to drip off. Dredge in the flour mixture, ensuring the chicken is evenly coated.

    Fry the Chicken

    In a large skillet, heat oil over medium-high heat. Fry the chicken breasts for 6-7 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Fried Fish Fillet

    Soak the fish fillets in buttermilk for at least 30 minutes.

    In a bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper.

    Remove the fish from the buttermilk, allowing excess to drip off. Dredge in the cornmeal mixture until well coated.

    In a skillet, heat oil over medium-high heat. Fry the fish fillets for 3-4 minutes on each side, or until golden and cooked through. Drain on paper towels.
