Preparing the Base

    Cooking Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally until thickened. Add salt and pepper to taste before serving.

    Cooking House Potatoes

    Dice 2 cups of house potatoes into small cubes. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 15-20 minutes until golden brown and crispy, stirring occasionally.

Preparing the Toppings

    Sautéing Vegetables

    Dice 1 medium onion, 1 medium bell pepper, and 1 whole jalapeño (remove seeds for less heat). In a skillet, heat the remaining olive oil over medium heat. Add the onions and sauté for 2-3 minutes until translucent. Add bell pepper and jalapeño, and continue to sauté for another 3-4 minutes until softened.

    Cooking Ham, Sausage, and Bacon

    In the same skillet, add 1 cup of diced ham, 1 cup of homemade pork sausage crumbles, and 1 cup of bacon bits. Cook for 5-7 minutes, stirring occasionally, until heated through and slightly crispy.

    Cooking Eggs

    Prepare 2 eggs in your desired style (fried, scrambled, or poached). Cook in a separate pan to your preference.

Assembling the Power Breakfast Bowl

    Combining Ingredients

    In a large bowl, layer either the prepared grits or house potatoes as the base. Top with the sautéed vegetables and the meat mixture. Finally, add the cooked eggs on top. Serve hot and enjoy!
