Pancakes

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well combined.

    Mix Wet Ingredients

    In another bowl, whisk together the milk and egg. If using, melt the butter and add it to the wet mixture.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid over-mixing; a few lumps are fine.

    Cook the Pancakes

    Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.

    Serve

    Remove pancakes from the skillet and keep warm. Serve topped with creamy butter.

Eggs

    Prepare the Eggs

    In a non-stick skillet, heat the butter or oil over medium heat.

    Cook the Eggs

    Crack the eggs into the skillet. For scrambled eggs, whisk them in the pan until cooked to your liking. For fried eggs, cook until the whites are set and the yolks are cooked to your preference.

    Season

    Season the eggs with salt and black pepper to taste before serving.

Grits or House Potatoes

    Prepare Grits (if chosen)

    In a small saucepan, bring water to a boil. Add grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, until thickened, about 5-7 minutes.

    Prepare Potatoes (if chosen)

    If using potatoes, dice them and sauté in a separate skillet with butter over medium heat until golden and tender, about 10-15 minutes. Season with salt.
