Prepare the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid over-mixing; a few lumps are fine.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.

In a non-stick skillet, heat the butter or oil over medium heat.

Season the eggs with salt and black pepper to taste before serving.
Grits or House Potatoes

Prepare Grits (if chosen)
In a small saucepan, bring water to a boil. Add grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, until thickened, about 5-7 minutes.
