    In a large mixing bowl, combine the ground pork, salt, black pepper, garlic powder, onion powder, dried thyme, dried sage, red pepper flakes, brown sugar, and cold water.

    Use your hands to mix the ingredients together until well combined. Be careful not to overwork the meat.

Forming Patties

    Shaping

    Divide the mixture into 24 equal portions. Use your hands to shape each portion into a patty, about 1/2 inch thick.

Cooking

    Pan-Frying

    Heat a skillet over medium heat. Once hot, add the sausage patties to the skillet, making sure not to overcrowd the pan.

    Cook the patties for about 4-5 minutes on each side, or until they are browned and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 160°F (71°C).
