Seasoned Rice Medley

Regular Side (choose one)

Method

Grilling Seafood

  1. 1

    Prepare the Seafood

Choose your seafood option: Salmon, Shrimp, Ahi Tuna, or Redfish. Pat them dry with paper towels.

  2. 2

    Season the Seafood

Season each piece of seafood with salt and black pepper to taste. Optionally, drizzle with a bit of olive oil.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  4. 4

    Grill the Seafood

Place the seafood on the grill. Grill salmon and redfish for about 4-5 minutes per side, shrimp for about 2-3 minutes per side, and ahi tuna for about 2-3 minutes per side for medium rare.

  5. 5

    Check for Doneness

Ensure that the seafood is cooked through (opaque for shrimp and salmon, and slightly rare in the center for ahi tuna).

  6. 6

    Remove and Rest

Once cooked, remove the seafood from the grill and let it rest for a few minutes before serving.

Preparing Seasoned Rice Medley

  1. 7

    Sauté Vegetables

In a medium saucepan, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened (about 3-4 minutes). Add minced garlic and sauté for another minute.

  2. 8

    Cook the Rice

Add the long-grain rice to the saucepan and stir to coat the rice with the oil and vegetables. Pour in the chicken broth, then add salt and black pepper. Bring to a boil.

  3. 9

    Simmer

Once boiling, reduce heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.

  4. 10

    Fluff and Garnish

Remove from heat, fluff the rice with a fork, and mix in chopped parsley.

Preparing Regular Side

  1. 11

    Choose Your Side

Select one side from steamed broccoli, coleslaw, or mixed green salad, and prepare accordingly (steam broccoli, toss coleslaw, or assemble salad).
