Grit Cake Preparation

    Cook the Grits

    In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Slowly whisk in 1 cup of grits. Reduce the heat to low and cook, stirring frequently, for about 20 minutes or until the grits are thick and creamy.

    Add Butter and Cheese

    Once the grits are cooked, stir in 2 tbs of butter, 1 cup of shredded cheddar cheese, 1 cup of finely chopped jalapeños, and 1 tsp of black pepper until well combined. Remove from heat.

    Set the Grits

    Pour the mixture into a greased baking dish and spread it evenly. Allow it to cool and set at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until firm.

Breading Preparation

    Prepare the Breading Station

    Set up a breading station with three shallow dishes: one with 1 cup of all-purpose flour seasoned with 1 tsp of salt and 1 tsp of black pepper, one with 2 beaten large eggs, and one with 1 cup of breadcrumbs.

    Cut and Coat the Grit Cake

    Once the grits are firm, cut them into squares or rounds. Dredge each piece in the flour mixture, dip into the beaten eggs, and then coat with breadcrumbs, pressing gently to adhere.

    In a large skillet, heat 2 cups of vegetable oil over medium heat. Once hot, carefully add the coated grit cakes in batches, frying for 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
