    Peel and Cut Potatoes

    Peel the Russet potatoes and cut them into even strips, about 1/4 inch thick, to ensure uniform cooking.

    Soak Potatoes

    Place the cut potato strips in a large bowl. Add enough water to cover the potatoes and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

    Season Potatoes

    Sprinkle 1 tsp of salt over the dried potato strips and toss to coat evenly.

Frying

    Heat Oil

    In a large heavy-bottomed pot or deep fryer, pour in 4 cups of vegetable oil and heat it to 325°F (160°C). You can use a deep-fry thermometer to check the temperature.

    Fry Potatoes

    Carefully add batches of the potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-6 minutes until they are pale and soft. Remove them with a slotted spoon and place on paper towels to drain.

    Increase Heat

    Increase the oil temperature to 375°F (190°C) for the second fry.

    Second Fry

    Return the first batch of fries to the hot oil and fry for another 2-3 minutes until they turn golden brown and crispy. Remove with a slotted spoon and let drain on paper towels.

    Season and Serve

    Immediately sprinkle with salt for seasoning and serve hot with your favorite dipping sauce.
