Method

Preparation of Chicken Fried Steak

  1. 1

    Tenderize the Steak

Using a meat mallet, pound the beef round steak to about 1/2 inch thickness. Season both sides with salt, black pepper, garlic powder, and paprika.

  2. 2

    Set up Breading Station

Set up a three-step breading station: one bowl with buttermilk, another with flour, and a third for beaten eggs.

  3. 3

    Bread the Steaks

Dip each steak into the buttermilk, then coat it in flour, then dip it back into the buttermilk, and finally coat with flour again to create a thick crust.

  4. 4

    Fry the Steaks

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks. Fry for 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Preparation of White Gravy

  1. 5

    Make Roux

In the same skillet used for frying the steaks, reduce the heat to medium. Add butter and let it melt. Stir in flour and cook for about 2 minutes until golden brown.

  2. 6

    Add Milk

Gradually whisk in milk, ensuring there are no lumps. Continue to whisk until the gravy thickens, about 5-7 minutes.

  3. 7

    Season the Gravy

Add salt and black pepper to taste. Remove from heat and keep warm.

Preparation of Eggs

  1. 8

    Cook the Eggs

In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and black pepper to taste.

Assembly

  1. 9

    Plate the Dish

Place a chicken fried steak on each plate, top generously with white gravy, and serve alongside the cooked eggs.
