Set up Breading Station
Set up a three-step breading station: one bowl with buttermilk, another with flour, and a third for beaten eggs.

Bread the Steaks
Dip each steak into the buttermilk, then coat it in flour, then dip it back into the buttermilk, and finally coat with flour again to create a thick crust.

Fry the Steaks
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks. Fry for 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Gradually whisk in milk, ensuring there are no lumps. Continue to whisk until the gravy thickens, about 5-7 minutes.

Add salt and black pepper to taste. Remove from heat and keep warm.

In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and black pepper to taste.
