Method
Fried Catfish

Marinate the Catfish
In a large bowl, pour the buttermilk over the catfish fillets and let them marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each piece in the cornmeal mixture, ensuring it's well coated. Carefully place the coated catfish in the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Add Crawfish and Broth
Stir in the crawfish tails, chicken broth, Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for about 10 minutes, allowing flavors to meld.

Finish the Étouffée
Stir in sliced green onions right before serving.

Plate the Dish
On a serving plate, place a generous scoop of rice, top it with the fried catfish, and generously ladle crawfish étouffée over the top. Serve with your choice of regular side.
