Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the heads and innards, and peel off the skin. Cut the bodies into rings and set aside.

    Prepare the Breading

    In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the eggs. If using breadcrumbs, place them in a third bowl.

    Bread the Calamari

    Dip the calamari rings into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs if using. Set aside on a plate.

    Heat Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches, avoiding overcrowding. Fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

    Cook the Sauce

    Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well and let the sauce simmer for about 15 minutes, stirring occasionally.

    Finish Sauce

    If using, stir in fresh basil at the end of cooking for added flavor. Remove from heat.
