Grit Cake

Method

Grit Cake

    Prepare the Grits

    In a medium saucepan, bring 3 cups of water and 1 tsp of salt to a boil. Slowly whisk in 1 cup of cornmeal, stirring continuously to prevent lumps.

    Cook the Grits

    Reduce the heat to low and cook the grits for about 15-20 minutes, stirring frequently until thickened. Remove from heat and stir in 1 cup of shredded cheddar cheese and 2 diced jalapeños.

    Set and Cut the Grit Cake

    Pour the mixture into a greased 9-inch square pan. Allow it to cool completely, then refrigerate for at least an hour to firm up. Once set, cut into 4 square cakes.

    Fry the Grit Cakes

    In a large skillet, heat 1 cup of vegetable oil over medium heat. Fry the grit cakes until golden brown on both sides, about 3-4 minutes per side. Remove and let drain on paper towels.

Seafood Au Gratin Sauce

    Make the Roux

    In a saucepan, melt 2 tbsp of butter over medium heat. Whisk in 2 tbsp of flour and cook for 1-2 minutes until bubbly and golden.

    Add Milk and Cream Cheese

    Gradually whisk in 1 cup of milk and cook until the mixture thickens. Stir in 4 oz of cream cheese until melted and smooth.

    Add Seafood and Seasoning

    Fold in 1 cup of shrimp, 1 cup of crawfish tails, and season with 1 tbsp of Cajun seasoning, 0.5 tsp of salt, and 0.5 tsp of black pepper. Cook for an additional 5 minutes until the seafood is heated through.

    Finish with Cheese

    Stir in 0.5 cup of grated Parmesan cheese until melted and well combined. Remove from heat and set aside.

Eggs

    Cook the Eggs

    In a non-stick skillet, melt 1 tbsp of butter over medium heat. Crack 2 eggs into the skillet and cook until the whites are set and yolks are cooked to your preference (sunny side up, over easy, etc.).

Assembly

    Plate the Cajun Benedict

    On each plate, place one fried grit cake. Top with a cooked egg and generously drizzle with the seafood au gratin sauce. Serve immediately.
