Method
Preparation
- 1
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.
- 2
In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth.
Cooking
- 3
Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; it's okay if there are a few lumps.
- 4
Heat the Pan
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- 5
Cook the Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, or until golden brown.
