Prepare the Boudin Filling
Remove the casing from the boudin sausage and place the sausage meat in a large mixing bowl.

Mix Ingredients
Add the cooked rice, chopped green onions, garlic powder, black pepper, and eggs to the bowl with the boudin sausage. Mix thoroughly until well combined.

Form the Balls
Using your hands, shape the mixture into balls, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Chill the Balls
Refrigerate the shaped boudin balls for at least 30 minutes to help them hold their shape during frying.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Coat the Balls
Roll each boudin ball in breadcrumbs until thoroughly coated.

Fry the Boudin Balls
Carefully drop the coated boudin balls into the hot oil in batches, making sure not to overcrowd the pan. Fry for 4-5 minutes or until golden brown.

Drain and Serve
Remove the boudin balls from the oil with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
