Prepare the Dates
Preheat your oven to 375°F (190°C). Using a sharp knife, make a slit in each Medjool date and remove the pit. Stuff each date with approximately 5 grams of blue cheese.

Wrap with Bacon
Cut each bacon slice in half. Wrap each stuffed date with a half slice of bacon, securing it with a toothpick if necessary. Place the wrapped dates seam-side down on a baking sheet lined with parchment paper.
Making the Balsamic Reduction

Combine Ingredients
In a small saucepan, combine balsamic vinegar, honey, and salt. Stir to mix well.

Reduce the Mixture
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the liquid has reduced by half and has a syrupy consistency. Remove from heat and let it cool slightly.
Cooking the Dates

Bake the Wrapped Dates
Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the bacon is crispy and golden brown. Turn the dates halfway through cooking to ensure even crisping.
Serving

Remove the baked dates from the oven and let them cool for a few minutes. Arrange the dates on a serving platter and drizzle with the balsamic reduction before serving.
