Pork Shoulder Burnt Ends

    Prepare the Pork

    Preheat your smoker to 225°F (107°C). Trim excess fat from the pork shoulder and cut it into 2-inch cubes.

    Season the Cubes

    In a bowl, combine smoked paprika, brown sugar, salt, black pepper, garlic powder, and onion powder. Toss the pork cubes in the seasoning mix until evenly coated.

    Smoke the Pork

    Place the seasoned pork cubes on the smoker rack and smoke for about 4-5 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender.

    Prepare the Sauce

    Once the pork is done, remove it from the smoker and toss it in BBQ sauce. Allow it to rest for 10-15 minutes before serving.

Onion Straws

    Slice the Onion

    Cut the large onion into thin slices to create onion rings.

    Prepare the Breading

    In a bowl, combine all-purpose flour, cornstarch, and salt. Dip the onion slices into buttermilk, then coat with the flour mixture.

    Fry the Straws

    Heat vegetable oil in a deep pot over medium-high heat. Once hot, fry the onion straws in batches until golden brown, about 2-3 minutes. Drain on paper towels.

Cole Slaw

    Shred the Vegetables

    Shred the cabbage and carrot using a grater or food processor.

    In a large bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.

Assembly

    Take a brioche bun and layer it with BBQ pork, a generous amount of cole slaw, onion straws, and pickles. Top with the other half of the bun.
