Method

For the Grits

  1. 1

    Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt and the grits. Stir well to prevent lumps.

  2. 2

    Cook the Grits

Reduce heat to low and cover. Cook the grits for about 20-25 minutes, stirring occasionally until thickened.

  3. 3

    Finish the Grits

Once cooked, remove from heat and stir in 2 tablespoons of butter and 1 cup of cheddar cheese until melted and creamy.

For the Shrimp and Sausage

  1. 4

    Prepare the Ingredients

Slice the Country Pleasin sausage and bell peppers. Mince the garlic. Set aside.

  2. 5

    Cook the Sausage

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced sausage and cook for about 5 minutes, or until browned.

  3. 6

    Add the Vegetables

Add the bell peppers and minced garlic to the skillet and sauté for 3-4 minutes until the peppers are tender.

  4. 7

    Cook the Shrimp

Add the shrimp, sun-dried tomatoes, black pepper, and paprika to the skillet. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

  5. 8

    Garnish and Serve

Remove from heat and stir in sliced green onions. Serve the shrimp mixture over the creamy grits.
