Method
Prepare the Blackened Redfish

Season the Fish
Pat the redfish fillets dry with paper towels. Sprinkle the blackening seasoning evenly on both sides of each fillet.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat. Make sure the oil is hot but not smoking.

Prepare the Remoulade

Mix Ingredients
In a medium bowl, combine the mayonnaise, Dijon mustard, chopped capers, lemon juice, hot sauce, paprika, garlic powder, salt, and black pepper.

Stir Well
Mix all ingredients until well combined. Taste and adjust seasoning if necessary.
Assemble the Sandwich

Prepare the Bread
Slice the French bread pieces lengthwise, creating a pocket for the fillings.

Add Lettuce and Remoulade
Spread a generous amount of remoulade on the bottom half of each piece of bread. Lay down 2 lettuce leaves on top.

Add Tomato and Pickles
Place 2 slices of tomato and a handful of pickles on top of the lettuce.

Add the Blackened Fish
Top the vegetables with a blackened redfish fillet.

Close the Sandwich
Close the sandwich with the top half of the French bread. Serve immediately.
