Preparation of Seafood

Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels.

Prepare the Shrimp
In a bowl, combine the shrimp with the Cajun seasoning and let it marinate for 15 minutes.

Prepare the Oysters
Drain the oysters well and set aside.
Breading and Frying

Set Up the Breading Station
In one bowl, mix flour and Cajun seasoning. In another bowl, whisk together eggs and milk.

Fry the Seafood
In a large pot, heat vegetable oil over medium-high heat. Fry catfish for 3-4 minutes per side until golden brown. Fry shrimp for 2-3 minutes until they turn pink. Fry oysters for 2-3 minutes until golden.
Assemble the Po-Boys

Prepare the Bread
Slice the French bread rolls in half lengthwise.

Build the Po-Boys
Layer shredded lettuce, sliced tomato, and pickles on the bottom half of the roll. Place the fried seafood on top and drizzle with cocktail or tartar sauce.

Place the top half of the roll on the sandwich and serve with fries or coleslaw on the side.
