Prepare the Fritter Mixture
In a large bowl, combine the pimento cheese, all-purpose flour, cornmeal, egg, milk, baking powder, salt, and black pepper. Mix until well combined.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the fritter mixture for at least 30 minutes. This helps the fritters hold their shape while frying.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Form the Fritters
Using a tablespoon or a small ice cream scoop, scoop the chilled fritter mixture and shape it into small balls, about 1 inch in diameter.

Fry the Fritters
Carefully drop the fritters into the hot oil, frying them in batches to avoid crowding the pot. Fry for about 3-4 minutes or until golden brown, turning occasionally.

Drain and Serve
Once cooked, remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve warm.
