For the Philly Steak & Cheese

    Prepare the Vegetables

    Slice the green bell pepper and onion into thin strips.

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, and sauté until they are soft and slightly caramelized, about 5-7 minutes. Season with salt and black pepper.

    Cook the Steak

    In the same skillet, increase the heat to high. Season the ribeye steak with salt and black pepper, then add to the skillet. Cook for about 3-4 minutes per side for medium rare, or until cooked to your desired doneness. Remove from heat and let rest for a few minutes.

    Slice the Steak

    Once the steak has rested, slice it thinly against the grain.

    Assemble the Sandwiches

    Place the sliced steak onto the hoagie rolls, top with the sautéed peppers and onions, and finish with a generous amount of mozzarella cheese.

    You can place the assembled sandwiches under a broiler for 2-3 minutes to melt the cheese, if desired.

    Combine Ingredients

    In a small saucepan, combine beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.

    Simmer the Au Jus

    Bring the mixture to a simmer over medium heat. Let it simmer for about 10 minutes to allow the flavors to meld.

    Serve the warm au jus alongside the Philly steak & cheese sandwiches for dipping.
